Potatis KorvBy Jerry Nelson Food traditions for second and third generation Swedish Americans often reflect the peasant foods at the time of emigration in the late 1800s early 1900s. When I was a boy, these sausages were available at a local independent grocery store, and they were highly prized during the Christmas season. The store is long gone, but I make these every year around Christmas time for my family. Most likely, potatis korv is all but forgotten in the homeland; I know when I mentioned them to my cousin in Sweden, she had not heard of them. |
