Pernilla's meatballs
It's the dog days of summer, but we all still need to eat, don’t we? We turned, again, to singer/entertainer Pernilla Wahlgren for inspiration on what to create in the kitchen, and found a different recipe for “köttbullar” or meatballs. “Köttbullar med mycket smack,” Wahlgren calls them, “Meatballs with a lot of taste,” and when you read the list of ingredients you will certainly agree.

For 40 meatballs you will need:
1/2 cup (4 oz) breadcrumbs
3/4 cup (6 oz) milk
100 grams feta cheese
1/2 cup (100 rams) sun-dried tomatoes in oil
a handful of parsley
3-1/2 pounds (800 grams) minced beef
1/2 cup (4 oz) heavy cream
1 egg
1-2 teaspoons salt
1 teaspoon black pepper
½ teaspoon cayenne pepper
1 teaspoon French mustard
1 garlic clove, pressed
butter for frying

Instructions:
Mix breadcrumbs and milk in a bowl and let swell for about 10 minutes. Crumble the feta cheese, finely chop the tomatoes and the parsley. Mix the beef and the breadcrumb mix and the rest of the ingredients in a big bowl. Make meatballs (water your hands to make it easier). Fry in butter on medium heat, be sure not to fry too many meatballs at a time.
