What’s better than a fresh potato salad this time of the year? Perfect for picnics and as sides to barbecues. This recipe, serving 8, comes from Alltommat.se
Ingredients:
3½ lbs new potatoes, boiled and quartered
6 scallions, chopped
1 bunch radishes
Dressing
2 Tablespoon white balsamic vinegar
4 Tablespoon vegetable oil
1 teaspoon Dijon-type mustard
1 garlic clove, grated
4 oz fresh herbs (chopped basil, dill, chervil)
salt and pepper


1.Mix boiled and quartered potatoes, scallions and radishes in a bowl.
2. In a smaller bowl mix vinegar, oil, mustard and garlic. Stir in the herbs and add salt and pepper to taste.
3. Carefully add the dressing to the potato mix. Put in fridge until cool. Garnish with chervil.
